Ingredients
- 1 medium brinjal (eggplant) (peeled and diced)
- 1/2 cup red lentils (rinsed)
- 2 cups water
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a pot, combine water and lentils. Bring to a boil and simmer for 10 minutes.
- Add diced brinjal and cook until both are tender, about 10 minutes more.
- Drain any excess water and mash the lentils and brinjal together.
- Stir in olive oil, minced garlic, salt, and pepper until well combined.
